Garlic Mashed Potatoes Thanks Heather!
(This is perfect to pair with a rotisserie chicken from Fred Meyer or Costco for a quick and easy meal. Also great with your favorite meatloaf.)

3 lbs russet potatoes (7-8)
1 ½ cup sour cream
5 tbs butter
1 ½ tsp salt and pepper
half and half (less than a pint)
3 cloves pressed garlic

Cook and mash potatoes. Add other ingredients, adding more sour cream or half and half until potatoes are fairly wet. Put potato mixture into greased casserole (optional: sprinkle shredded cheese on top). Bake at 325 degrees for an hour or less.

Scalloped Pototoes
¼ chopped onion
2 tablespoons butter
2 tablespoons flour
1 ¼ cup milk
3 medium potatoes, peeled and thinly sliced (3 cups)

For sauce, cook onion in margarine till tender. Stir in flour, ½ tsp salt, and 1/8 tsp pepper. Add milk all at once. Cook and stir till thickened and bubbly. Remove from heat. Place half the sliced potatoes in a greased 1-quart casserole. Cover with half the sauce. Repeat layers.

Bake, covered, in a 350* oven for 35 minutes. Uncover; bake 30 minutes more or till potatoes are tender. Let stand 5 minutes. Serves 4.
